Whats cooking? Mocha Brownie Bites πŸ’— Honest things first – 1. I should have taken a smaller baking tray to give my brownies a fluffier texture, I was excited to use my new square baking tray πŸ™ˆ 2. Could have waited a little longer to cut them to have my chocolate chips look pretty πŸ™†πŸ»β€β™€οΈ 3. The texture, flavors and taste is ON POINT so sharing it with you all, no compromise on taste 🧑 Well just incase you’ve got some ripe bananas and thinking what to make today, here you go 😁 They’re fudgy and chocolatey, taste yummmmm, the hint of coffee aaaah magical and with this frame it already feels like weekend πŸŽ‰

Ingredients
2 eggs
1/4 cup oil
2 tbsp coconut sugar (or 3 for more sweetness)
1 cup mashed ripe bananas (about 2 large bananas)
3/4 cup whole wheat flour
1/2 cup unsweetened cocoa powder
1/2 tsp baking powder
Pinch of salt
1/4 cup brewed coffee
1/3 cup crushed walnuts
Pinch of salt
.
Whisk eggs until fluffy, add oil + sugar and whisk well until smooth. Add mashed bananas and combine, add sieved flour, cocoa powder, baking powder and salt, gently fold until it comes together. Add brewed coffee and crushed walnuts, combine properly. In a baking tray layered with parchment paper spread the batter until even and top up with chocolate chips. Bake for 25 mins in a pre heated oven @ 350F. I used a 9inch square baking tray, recommend going for a 7/8 inch tray. Let it cool down properly before cutting into squares.
