Green Moong and Quinoa Khichdi, papad + pickle + yogurt to make it a soul satisfying meal 💗 Khichdi is a dish in the South Asian cuisine made with rice and lentils, you can use grains of choice for some variations. It is a salty porridge and makes a wholesome meal 😊 I already have the rice version on my feed, it is also known as punjabi khichdi. Made this deliciousness last week and added a handful of peas and corns this time for a pretty sight to my eyes 😍

Serves 3- 3/4 cup split green moong dal, wash and soak for 5-10 mins. Meanwhile in IP or pressure cooker on sauté mode – add 1 tbsp oil, once hot add 1 tsp cumin seeds + pinch of heeng, let it splutter – chopped onions optional, add 1 tbsp finely chopped ginger, 2 sliced green chilies. Give it 30 sec add 1 1/2 tsp salt, 1/2 tsp turmeric, mix – drain water, add dal, combine with spices and let cook for 1-2 mins. Add 1/4 cup quinoa mix with dal, add 4 cups water,handful of peas and corn – stir and pressure cook for 3 mins or 1 whistle in a cooker. Natural release pressure. Add 1/2 cup water if you desire to manage consistency. Add 1 tbsp ghee, juice of 1/2 lime, 1/2 tsp black pepper and bring to a boil- finish with cilantro, Ready to relish 💕
